As part of the program under the Department of Food, Science and Chemistry (DFSC), the principles learned while earning the degree of BS Food Technology are applied to an actual food processing plant. The plant practice was conducted at a dairy processing plant of the Food People, Incorporated (TFPI) in Guiguinto, Bulacan from April 18, 2006 to May 22, 2006. For 288 hours, the student was able to gather information about the plant including its history, background, rules and regulations, business organization, products and standard parameters. She also had a hands-on experience on the usage of the various items of equipment for manufacturing ice cream products. She conducted physic-chemical analyses, microbiological tests and sensory evaluation of the company's raw materials, in-line mixes and inclusions, and finished products. The student underwent practical training in the production and quality management mingled with the plant personnel and applied the principles learned from the academe. The manuscript aims to document and analyze the information gathered from the training experience and to state some recommendations for plant improvement in line with the principles of food technology.
