The plant practice was conducted from April 16 to May 28, 2002, at the different departments of Nenita Quality Foods Corporation. These included the Production Department, Fresh Meat Department, Quality Assurance/Research and Development Department, and the Materials and Supplies and Purchasing Department. The student was assigned to observe different plant processes and take part in some plant operations. Monitoring and packaging were done in the production area; surveillance of slaughtering procedures was done in the Fresh Meat Department; and chemical and microbial analyses were performed under the Quality Assurance Department. Lectures were given regarding the company and operations done in the plant. Recommendations were offered to some problems encountered in relation to plant procedures.
