As part of the program under the Department of Food Science and Chemistry (DFSC), the student underwent a plant practice in a processing plant. The plant practice was conducted in the ice cream manufacturing plant at The Food People, Incorporated (TFPI) in Guiguinto, Bulacan from April 14, May 20, 2008 for 288 hours. This activity helped the student apply the knowledge gained in the academic experience in the real world of food industry. The student was able to gather information about the company including its history, background, rules and regulations, business organization, products and standard parameters. The student was also exposed to four different areas namely, processing, in-line production, HACCP documentation and laboratory. She had also conducted physico-chemical tests, microbiological test; assess product quality, and sensory evaluation of the products. The student also had the chance to mingle with the workers especially during the production and processing. This manuscript aimed to present the company's information, provide technical analyses and to state some recommendations.
