520 _aTo strengthen the student?s theoretical knowledge in the field of Food technology, the student underwent 288 hours of plant practice at Far East Seafood, Inc., from April to May 2008. In this practicum, the student was given the opportunity to see and experience the practical application of the principles and concepts in books in a tuna processing plant. He was able to experience first hand how his learning from the academe are treated and employed in the daily operations of the plant. The intern was also able to gather relevant information not only about the activities in the production area but the entire company in general. Among the information taken are tuna process flow, and product analysis. The student was also able to make recommendations on the activities in the production area particularly in terms of the company?s Quality Control. This manuscript thus seeks to present and document the student?s experiences, the information he obtained, and the lessons he learned during his 288-hour tenure
